Preheat oven to 400⁰F. Grease a large baking sheet and set aside
Parboil potatoes in boiling water for 5-8 minutes
In a large bowl, combine olive oil, salt, pepper, herbs and cheese, and mix to combine. Add more olive oil of the cheese has absorbed most of it
Toss potatoes in the mixture to coat
Arrange cut side down in a single layer on the baking sheet
Place sheet on the bottom rack of the oven and bake for 25 minutes, turning with tongs or a spatula after 15 minutes, until potatoes are browned and crispy on the edges
Melt butter and combine with some fresh chopped parsley, if desired
Remove potatoes from the oven and drizzle with butter
