Keto Garlic Parmesan Shrimp

  • 1 lb large peeled & deveined shrimp, raw
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1/4 cup grated parmesan cheese
  • 2 tbsp chopped fresh parsley
  • 1 tsp lemon zest
  • Salt & pepper to taste
  • Lemon wedges (optional)

  1. Preheat oven to 425º F and line a baking sheet with parchment paper for easy cleanup.
  2. In a large mixing bowl, combine the shrimp, olive oil, garlic, parmesan cheese, parsley, lemon zest, salt, and pepper. Mix until shrimp is evenly coated.
  3. Spread the seasoned shrimp on a baking sheet in a single layer, ensuring they are not crowded to allow for even cooking.
  4. Place the baking sheet in the preheated oven and bake for approximately 12-15 minutes or until the shrimp turn opaque and are cooked through.
  5. Remove from oven and garnish with additional parsley and fresh lemon wedges, if desired.
