Low Carb Chicken Taco Soup

  • 2 lbs boneless skinless chicken breasts
  • 2 (8-oz) packages cream cheese
  • 1 (1-oz) package Ranch Dressing Mix
  • 1 Tbps Adobo Seasoning
  • 2 (10-oz) cans Ro*tel diced tomatoes and green chilis
  • 4 cups chicken broth
  1. Place all ingredients in a 6 quart slow cooker.  Cover and cook on LOW for 6-8 hours
  2. Remove chicken from slow cooker and shred.  Return to slow cooker and mix well.
  3. Serve with cheese, cilantro and sour cream, and other fixings as desired.
