- 1/4 cup soy sauce
- 1/3 cup brown sugar
- 1/3 cup pineapple juice
- 1 tbsp garlic paste
- 1 tbsp ginger paste
- 1 large pineapple
- 1 (2.5 to 3 lb) chicken
- In medium saucepan over medium-high heat, combine soy sauce, pineapple juice, brown sugar, garlic, and ginger.
- Stir and bring to a boil.
- Reduce heat and simmer for 5 minutes until it starts to thicken.
- Set aside to cool.
- Preheat smoker/oven to 350 degrees.
- Cut the pineapple to create a “stand” for the chicken. Brush with marinade.
- Roast for 15 minutes, then baste with the rest of the marinade.
- Cook for another 60-90 minutes until internal temp is 165 in the thickest part of the breast.
- Rest for 10 minutes, then serve.
