Pineapple Roasted Chicken

  • 1/4 cup soy sauce
  • 1/3 cup brown sugar
  • 1/3 cup pineapple juice
  • 1 tbsp garlic paste
  • 1 tbsp ginger paste
  • 1 large pineapple
  • 1 (2.5 to 3 lb) chicken
  1. In medium saucepan over medium-high heat, combine soy sauce, pineapple juice, brown sugar, garlic, and ginger.
  2. Stir and bring to a boil.
  3. Reduce heat and simmer for 5 minutes until it starts to thicken.
  4. Set aside to cool.
  5. Preheat smoker/oven to 350 degrees.
  6. Cut the pineapple to create a “stand” for the chicken. Brush with marinade.
  7. Roast for 15 minutes, then baste with the rest of the marinade.
  8. Cook for another 60-90 minutes until internal temp is 165 in the thickest part of the breast.
  9. Rest for 10 minutes, then serve.
