BBQ Bacon Chicken Loaf

  • 5 boneless skinless chicken breasts
  • 1 Tbsp salt
  • 1 Tbsp garlic powder
  • 1 Tbsp paprika
  • 1 Tbsp onion powder
  • 1 Tsp chili powder
  • 1 Tsp black pepper
  • 1/2 Tsp cayenne pepper
  • 20 slices bacon
  • 10 slices cheddar cheese
  • 2 green bell peppers, sliced
  • 2 red bell peppers, sliced
  • 1/2 red onion, sliced
  • BBQ sauce
  1. Preheat oven to 350° F
  2. Quarter chicken breasts
  3. Mix all seasonings and coat chicken
  4. Line a loaf pan with bacon slices, in order to “wrap” the ingredients in the bacon
  5. Layer ingredients, lasagna style
    1. 4 pieces of chicken
    2. BBQ sauce
    3. 5 slices cheddar cheese
    4. 4 pieces of chicken
    5. BBQ sauce
    6. Green peppers
    7. Red onions
    8. BBQ sauce
    9. Red peppers
    10. 5 slices cheddar cheese
    11. Remaining chicken
  6. Fold bacon over the top
  7. Bake covered for 1 hour, then uncovered for 30 minutes
  8. Remove loaf from pan and baste with bbq sauce
  9. Broil for 5 minutes
  10. Slice and serve
