Slow Cooker Mongolian Beef

  • 1.5 lbs flank steak
  • 1/4 cup corn starch
  • 2 tbsp olive oil
  • 1/2 tsp garlic, minced
  • 3/4 cup soy sauce
  • 3/4 cup water
  • 3/4 cup brown sugar
  • 1 cup carrots, grated
  • Green onions, for garnish
  1. Thinly slice the flank steak into strips
  2. Add together the flank steak slices and corn starch to a resealable bag
  3. Shake thoroughly to evenly coat the steak
  4. Add olive oil, soy sauce, minced garlic, water, brown sugar, and carrots into the slow cooker and stir to combine
  5. Add the coated flank steak slices and mix until everything is evenly coated in the sauce
  6. Cook for 4-5 hours on LOW or 2-3 hours on HIGH. Steak will be cooked through and tender.
  7. Serve over rice (or riced vegetables) and sprinkle with green onions
