**Keto Taco Casserole

  • 2 lbs ground beef
  • 1 small onion, diced
  • 4 tbsp taco seasoning
  • 1.5 cups Mexican blend cheese, shredded
  • 10 oz can Rotel
  • 4.5 oz can chopped green chilis
  • 4 eggs, beaten
  • 1/4 cup heavy cream
  • 1 tsp pepper
  • 1 tsp salt
  • 1/2 tsp Xanthan Gum (omit if you drain the grease from the hamburger)
  • Optional: 1 small can black beans
  • Additional toppings as desired: Black olives, cilantro, green onions, sour cream, lettuce, jalapenos, avocado
  1. Preheat oven to 350 degrees F
  2. Dice the onion
  3. Saute the onion in olive oil until translucent (about 4-5 minutes)
  4. Brown the ground beef with the onion, salt, and pepper
  5. Add Xanthan Gum to thicken up the grease (or drain the grease)
  6. Add taco seasoning
  7. Transfer the beef mixture to a 9×11 casserole dish
  8. Add black beans, if desired
  9. Add 1 cup cheese, Rotel, and green chilies and stir until well combined
  10. In a separate bowl, crack and beat the eggs. Add the heavy cream to the eggs
  11. Pour the egg mixture into the ground beef mixture in the casserole dish and stir until fully combined
  12. Top with the remaining shredded cheese and optional olives
  13. Bake at 350 for 35-40 minutes
  14. Serve and add desired toppings
