- 2 lbs ground beef
- 1 small onion, diced
- 4 tbsp taco seasoning
- 1.5 cups Mexican blend cheese, shredded
- 10 oz can Rotel
- 4.5 oz can chopped green chilis
- 4 eggs, beaten
- 1/4 cup heavy cream
- 1 tsp pepper
- 1 tsp salt
- 1/2 tsp Xanthan Gum (omit if you drain the grease from the hamburger)
- Optional: 1 small can black beans
- Additional toppings as desired: Black olives, cilantro, green onions, sour cream, lettuce, jalapenos, avocado
- Preheat oven to 350 degrees F
- Dice the onion
- Saute the onion in olive oil until translucent (about 4-5 minutes)
- Brown the ground beef with the onion, salt, and pepper
- Add Xanthan Gum to thicken up the grease (or drain the grease)
- Add taco seasoning
- Transfer the beef mixture to a 9×11 casserole dish
- Add black beans, if desired
- Add 1 cup cheese, Rotel, and green chilies and stir until well combined
- In a separate bowl, crack and beat the eggs. Add the heavy cream to the eggs
- Pour the egg mixture into the ground beef mixture in the casserole dish and stir until fully combined
- Top with the remaining shredded cheese and optional olives
- Bake at 350 for 35-40 minutes
- Serve and add desired toppings
