Bacon Buttermilk Meatloaf

  • Meatloaf:
    • 1 cup diced onion
    • Olive oil
    • 1 lb ground beef
    • 1 lb ground pork
    • 1/2 cup diced ham
    • 1/2 tbsp diced carrots
    • 2 large eggs
    • 2 tbsp minced garlic
    • 3/4 cup breadcrumbs or panko
    • Salt & pepper or your favorite BBQ rub, to taste
    • 1/2 cup buttermilk
    • 1 tbsp hot sauce
    • 1 lb bacon
  • Glaze:
    • 1 cup ketchup
    • 1/4 cup brown sugar
    • 2 tbsp Worcestershire sauce
    • 2 tbsp Balsamic vinegar
    • 1 tbsp hot sauce
  1. Mix the meatloaf ingredients in a bowl
  2. Line a meatloaf pan with bacon strips
  3. Put meatloaf mix in the pan
  4. Cover the top of the meatloaf with more bacon
  5. Grab a baking sheet and flip thr meatloaf over onto the baking sheetand remove the meatloaf from the pan
  6. For the glaze:
    1. Mix all Glaze ingredients together in a saucepan
    2. Heat over a medium heat and simmer for a few minutes
    3. Brush over the meatloaf
  7. Place on 225⁰ grill for indirect cooking
  8. Half way through cooking, turn the meatloaf (indirect cooking only) and rebaste the meatloaf (if desired)
  9. Remove once internal temp reaches 165⁰F
