- Meatloaf:
- 1 cup diced onion
- Olive oil
- 1 lb ground beef
- 1 lb ground pork
- 1/2 cup diced ham
- 1/2 tbsp diced carrots
- 2 large eggs
- 2 tbsp minced garlic
- 3/4 cup breadcrumbs or panko
- Salt & pepper or your favorite BBQ rub, to taste
- 1/2 cup buttermilk
- 1 tbsp hot sauce
- 1 lb bacon
- Glaze:
- 1 cup ketchup
- 1/4 cup brown sugar
- 2 tbsp Worcestershire sauce
- 2 tbsp Balsamic vinegar
- 1 tbsp hot sauce
- Mix the meatloaf ingredients in a bowl
- Line a meatloaf pan with bacon strips
- Put meatloaf mix in the pan
- Cover the top of the meatloaf with more bacon
- Grab a baking sheet and flip thr meatloaf over onto the baking sheetand remove the meatloaf from the pan
- For the glaze:
- Mix all Glaze ingredients together in a saucepan
- Heat over a medium heat and simmer for a few minutes
- Brush over the meatloaf
- Place on 225⁰ grill for indirect cooking
- Half way through cooking, turn the meatloaf (indirect cooking only) and rebaste the meatloaf (if desired)
- Remove once internal temp reaches 165⁰F
