Breakfast Egg Flowers

  • 60 thin salami slices, about 2.5″ in diameter
  • 1 cup shredded mozzarella
  • 12 large eggs
  • Salt and Pepper to taste
  1. Preheat oven to 400 F.
  2. Line the bottom of each cup of a 12-cup nonstick muffin tin with a slice of salami.
  3. Arrange 4 more salami slices around the center slice.
  4. Sprinkle with mozzarella cheese.
  5. Crack an egg inside the salami and season with salt and pepper.
  6. Bake until eggs are cooked through, about 15 minutes.
