- 60 thin salami slices, about 2.5″ in diameter
- 1 cup shredded mozzarella
- 12 large eggs
- Salt and Pepper to taste
- Preheat oven to 400 F.
- Line the bottom of each cup of a 12-cup nonstick muffin tin with a slice of salami.
- Arrange 4 more salami slices around the center slice.
- Sprinkle with mozzarella cheese.
- Crack an egg inside the salami and season with salt and pepper.
- Bake until eggs are cooked through, about 15 minutes.
