Keto Pickles

  • 24 oz jar
  • 3/4 cup filtered water
  • 3/4 cup distilled white vinegar
  • 1.5 tbsp Himalayan pink salt
  • 1.5 tbsp dried dill OR 4 sprigs fresh dill
  • 1 heaping tbsp minced garlic
  • 2 tsp whole peppercorns
  • 1 English cucumber

  1. Combine water, vinegar, and all spices in a jar.
  2. Cut ends off cucumber
  3. Cut cucumber in half width wise
  4. Cut cucumber in half width wise again (quarters)
  5. Cut each cucumber quarter lengthwise into quarters (for spears), rounds (for chips), or at an angle (for ovals).
  6. Fill the jar with the cucumber pieces and shake well.
  7. Refrigerate overnight
